Egg less Date Cake

You SHOULD try this recipe!!! You just should!!!

Navin was visiting me again that weekend but this time it was a special occasion. It was Valentines Day and we both were excited about it. It is interesting to know why I ended up baking the cake that day. Well, Valentines Day was just the occasion but the only reason to bake a Dates cake was that I had whole lot of dates with me which my aunt had got when she visited me from Dubai. I wanted to get rid of them. How much can one eat. So what better way!

Follow the recipe; it is quick and easy.

You will need -
2 cup dates
3/4 cup cashew nuts
3/4 cup sugar
1 cup milk
1 cup all purpose flour
1/2 cup oil
1 tsp baking soda

Preparation time around 1 hr

Soak the dates overnight in milk. Remove the seeds and grind the dates along with the milk in which it was soaked to fine paste. I had a terrible time removing the seeds even though I had soaked the dates overnight. You can preferably use seedless dates!

Grind the cashew nuts to fine powder. Add to the paste along with oil and sugar and mix well.
Add the baking powder and flour and continue mixing. Make sure to add the flour little by little; this will help to get an even texture.

Pour the mixture into a greased dish. Preheat oven and bake at 350 degrees F. Bake for 45 minutes. Prick the cake with a tooth pick or knife to check if its done baking.

I looked up online and saw how I could make a heart shape and learned that it is very easy. All you have to do is bake a square and a round shape cake. The diameter of the circle should be same as the sides of the square. I used a 8inch round and square cake trays (aluminum foil containers).
Cut the round cake into equal halves. Now place them against adjacent sides of the square shaped cake. Easy?! Look at this; a picture is worth a thousand words.

I covered the cake with a vanilla icing so that the edges along the cake pieces were not visible.
